Good Afternoon!

Today, I’m sharing with you one of my absolute FAVORITE ways to enjoy one of my favorite veggies… Brussel Sprouts! When I meal prep for the week, I usually make about 4 baked sweet potatoes, a set of my favorite Egg McMuffins, and these amazing Brussel Sprout chips [or these easy kale chips]! They are super simple to make and follow any paleo/whole 30/healthy diet PERFECTLY! In the photo above, I served these chips over a baked sweet potato with rotisserie chicken! Nom Nom!!

This recipe turns those sprouts into crunchy little chips, which provide the best texture to any paleo bowl you’ll ever make. They’re also awesome eaten alone as… well… chips!

Here’s the recipe:

CRISPY BAKED BRUSSEL SPROUT CHIPS

Prep Time: 15 Minutes // Total Time: 35 Minutes
Serving Size: 6 ounces // Macros: 1 proteins / 8 carbs /0 fats

Here’s What You Need:
Brussel Sprouts [the larger, the better]
Organic Olive Oil Cooking Spray
Salt and Pepper or other seasoning

1. Preheat the oven to 400 degrees F
2. Wash the Brussel Sprouts and slam the base sprout against the counter a couple times to release the ‘petals’
3. Carefully pull the petals off the stems into individual petals. You may have to continue to cut the base of the stem to do so
4. Spray a cookie sheet with the olive oil spray [I line the sheet with foil, too, to make cleanup easier]
5. Lay the petals onto the sheet and spray with the Olive Oil Spray
6. Salt and pepper to taste
7. Bake for 20 minutes or until the petals are golden brown
