23 Sep Recipe // Paleo Pancakes
Good Morning!
I love breakfast and I especially love pancakes. Sometimes my paleo diet keeps me from enjoying the breakfast items I love most [like biscuits and country gravy], but when it comes to pancakes, I’m covered! Today, I’m sharing my easy-breezy recipe with YOU! These paleo pancakes are so easy to make [they’re made with only 5 ingredients and they only take about 10 minutes total] and they taste great! They have me singing Jack Johnson’s “Banana Pancakes” all day long!
These are perfect for a Saturday morning, or my favorite, on those “Breakfast for dinner!” nights! Trust me… Once you make these, you’ll be hooked like I am!
I usually add some blueberries with these… and sometimes I imagine they’re chocolate chips! Funny story, I craved chocolate chip pancakes throughout my pregnancy… Kozy Kitchen often made them for pregnant-ol’ me at dinnertime, even when they didn’t offer breakfast all day! It made me one, HAPPY preggo! They weren’t paleo pancakes like these, but boy were they amazing!
These are great too, though. I swear!
Here’s the recipe:
PALEO PANCAKES
Prep Time: 3 minutes // Cook Time: 10 Minutes // Yields: 6 pancakes [2 Servings]
Serving Size: 3 Pancakes // Macros: 7.5 proteins / 26 carbs / 5.5 fats //
[with 4 tbsp of maple syrup, add 53 carbs]
2 Eggs
1/4 cup Almond Flour
1 Banana
2 tsp Cinnamon
1 tbsp Vanilla Extract
- Place all ingredients in a blender/food processor and blend well [I use a NutraBullet]
- Pour onto a hot skillet [wait until there are bubbles all throughout the batter]
- Flip the batter over and allow to cook on the other side
- Remove pancakes and repeat process until batter is gone
Add those blueberries or maple syrup and enjoy!
