Honestly, nothing says summer to me like cucumbers [okay, maybe watermelons] and on a hot, summer’s day, few things are as hydrating and refreshing as a cucumber! I once read a VERY fancy recipe for braised cucumbers and I thought “What? WARM cucumbers? Nothing sound grosser…”, but this past week I was making a meal that called for a refreshing side and I remembered the warm cucumbers and I thought “I’m going to try and make a warm cucumber salad!”
Why haven’t I eaten cucumbers warm before?
This warm cucumber salad is AH-MAZING, y’all! I can’t tell you how yummy it is! Not only did I go for seconds, my husband loved it and so did my friend who assured me that she wouldn’t like it since she doesn’t like dill [which I love!].
So, here it is! This recipe is a great and healthier side dish that will pair well with a ground turkey or red meat. It would be great with chicken, too! Give it a try! Even if you think it sounds disgusting, I think you’ll be surprised at how good it actually is!
WARM CUCUMBER SALAD
Prep Time: 15 Minutes // Total Time: 35 Minutes
Here’s What You Need:
2 Large cucumbers (Cut into quarters long-ways then diced into tick chunks)
1 Tablespoon Butter [I use KerryGold]
2 Tablespoons water
2 Tablespoons chopped dill
1 Tablespoon chopped parsley
Salt and Pepper
1. Melt the butter in a skillet and sauté the leek until tender
2. Add the cucumber and water, stir until blended well then cover and cook for about 4 minutes
3. Remove the cover and stir a few times
4. Move to a bowl and add the dill, parsley and salt and pepper to taste, mixing well
6. Serve this salad warm
